When Sean and Travis launched PMC, we knew it was the inception of a meat collective that perfectly represented our sourcing ethics, making them a “one-stop shop” for our meats. Rather than scale every program out of its original ethos, PMC selects their ranches and restaurant partners carefully, leveraging whole-animal programs across a nimble group of chefs who will happily use all the parts to ensure a program’s viability. In a landscape of big corporate food service groups and commodity meat systems, a collective such as PMC subverts the system beautifully and provides us access to family-run farms with full transparency and - most importantly - the highest-quality meats our region has to offer.

I first heard about Preservation Meat Collective from my friend Takashi at FlintCreek Cattle Co. I looked into it and thought the prices were too expensive for my restaurant. Sometime later I saw a video by Truth n’Food about Beast & Cleaver. I walk in the shop, and I meet Kevin and we talk about meat and bones, we agreed to trade his unused bones from Preservation Meat Collective for free ramen. At this time, I was buying cheap commodity bones, but my team noticed that the bones we got from Beast & Cleaver made our broth so much better. When we opened up our second location I called Sean again and we tried out the bones. Our customers immediately noticed. I have a special pressure cooker now that will allow me to use any part of the pig and I went to Pure Country with my team to learn more about it. The hog survived for so us we have to make them proud. After we visit the farm my team is more proud then ever with the product we use.
